here. I didn't make a special run to the grocery store for this, I used what ever I had in the fridge:
6 Eggs (you could also use egg beaters for this)
1 Stalk of Green Onion
2 Slices of Cheddar Cheese
Scramble the eggs, mix in the veggies (or what ever you have in your fridge). Fill the muffin cups about 1/2 full, the eggs puff up and if you over fill the cups it might be a little messy.
Once your muffin cups are filled, bake for 15-20 minutes at 350
How easy is that?! I made these ahead of time for a yard sale we had last week. I knew we would be busy and didn't want to have to do a drive-thru run.
